RECIPE TYPE: Breakfast

DIETARY INFO: Vegan

SERVING SIZE: 1

PREP TIME: 10 Minutes

COOK TIME: 6-8 Hour

TOTAL TIME: 9 Hour 10 Minutes

INGREDIENTS:

  • 1 cup rolled oats

  • 1 cup unsweetened almond milk (or any milk of your choice)

  • 1/2 cup chopped fresh strawberries

  • 1 tablespoon chia seeds

  • 1 tablespoon honey

  • 1/2 teaspoon vanilla extract

INSTRUCTIONS:

1. In a mixing bowl, combine the rolled oats, almond milk, chia seeds, honey, and vanilla extract. Stir until well combined.

 2. Add the chopped strawberries to the mixture and stir gently to combine.

3. Divide the mixture evenly between two mason jars or other airtight containers.

4. Cover the jars with lids and refrigerate overnight (or for at least 6 hours) to allow the oats and chia seeds to absorb the liquid and soften.

5. In the morning, remove the jars from the refrigerator and give them a quick stir. If the oats are too thick, you can add a splash of milk to thin them out to your desired consistency.

6. Top the oats with additional chopped strawberries, nuts, or other toppings of your choice.

7. Enjoy your delicious and nutritious breakfast!

 Storage:
Once prepared, overnight oats with strawberries and chia seeds can be stored in an airtight container in the refrigerator for up to 5 days. This makes them a great make-ahead breakfast option for busy mornings or meal prep. When you're ready to eat them, simply give the oats a quick stir and add any additional toppings you like. Enjoy!
